Union Commissary
This photograph shows what a temporary Union commissary depot looked like during the war. Large wooden barrels containing salted meat, coffee beans, and sugar are stacked next to crates of hardtack. It took a lot of food to feed the army even for one day!
Do this the day before your go on the field, and your will have enough tack to fill your haversack. It will be somewhat soft on Saturday morning, but, by Sunday, you should soak it in your coffee before eating, else you will have a hard time chewing.
SUBSTITUTE FOR COFFEE
HOE CAKE
FRIED GREEN TOMATOES
6-8 large green tomatoes
1 tsp. salt
1 Tbsp sugar
1 egg, well beaten
1/2 tsp pepper
1/2 cup bread crumbs
BreakfastThe word 'Breakfast" means a break from the fast of the night. But often people will skip this meal or just 'grab a bite' on their way to starting the day. TOPPING MIX
H'H Egg Casserole
1 lb. sausage 6 slices bread 6 eggs 1 tsp. dry mustard 2 c. milk 1 c. shredded sharp cheese salt & pepper to taste1. Cook & drain sausage
2. Spread in lightly greased 9 x13 in. pan
3. Sprinkle cubed meat over bread
4. Beat remaining ingredients together.
5. Pour over meat & bread
6. Refrigerate, covered, overnight
7. Bake at 350 for 45 min. with cover and then remove cover & bake at 325 for 15 min. (Serves 6)We serve this with Joe's secret special Home Fries!
Tropical French Toast4 eggs
1/3 c.milk
1/4 tsp. nutmeg
2/3 c. orange juice
1/4 c. sugar
1/4 tsp. vanilla
8 - 1 inch slices Italian bread
ground Macadamia nuts
1 stick butter (do not use margarine)1. Beat together first 6 ingredients
2. Place bread slices in pan so that they are single layer.
3. Pour egg mixture over bread and turn to make sure that all slices are wet,
4. Cover and refrigerate overnight
5. Melt butter on large cookie sheet.
6. Dip each bread slice in butter and turn over on pan.
7. Bake at 350 for 10 min.
8. Remove pan, turn slices over
9. Sprinkle with nuts
10. Return to oven for another 10-15 min.
11. Serve with syrup and Hawaiian garnish
