Breakfast

The word 'Breakfast" means a break from the fast of the night. But often people will skip this meal or just 'grab a bite' on their way to starting the day. But here at
Hallauer House Bed & Breakfast

our philosophy is "Eat Breakfast like a King, Lunch like a Prince, and Dinner like a Pauper!" So when you have breakfast here, you will be eating like a King! Come on in and taste the goodness. You will not forget it and you will not leave hungry!

 

Cold & Frothy Melon Soup

  1. In blender. combine half of all ingredients
  2. Cover and blend until smooth
  3. Transfer to large bowl
  4. Repeat with remaining ingredients
  5. Stir mixture thoroughly
  6. Cover & refrigerate at least 2 hrs.
  7. Ladle soup into chilled bowls
  8. Garnish and serve (Serves 6-8)
CIVIL WAR HARDTACK
  1. Combine the ingredients to form a stiff, but not dry dough. The dough should be pliable, but not sticky.
  2. Take the dough and flatten it out onto a greased cookie sheet.
  3. Roll the dough into a flat sheet apr. 1/2 inch thick.
  4. Using a bread knife, divide the dough into 3x3 inch squares.
  5. Take a 10-penny nail, put a 3x3 matrix of holes into the surface of the dough, all the way thru, at even intervals
  6. Bake in 450 degree oven for apr 20 Min., till lightly browned. Take out and let cool.

    Do this the day before your go on the field, and your will have enough tack to fill your haversack. It will be somewhat soft on Saturday morning, but, by Sunday, you should soak it in your coffee before eating, else you will have a hard time chewing.


SUBSTITUTE FOR COFFEE
DURING CIVIL WAR

CIVIL WAR HOE CAKE

CIVIL WAR FRIED GREEN TOMATOES

6-8 large green tomatoes    
1 tsp. salt
1 Tbsp sugar   
1 egg, well beaten
1/2 tsp pepper  
1/2 cup bread crumbs

Sausage and Egg Bake

1. Cook & drain sausage
2. Spread in lightly greased 9 x13 in. pan
3. Sprinkle cubed meat over bread
4. Beat remaining ingredients together.
5. Pour over meat & bread
6. Refrigerate, covered, overnight
7. Bake at 350 for 45 min. with cover and then remove cover & bake at 325 for 15 min. (Serves 6)

We serve this with Joe's special Yukon Gold Home Fries!

 

Cinnamon Coffee Cake

  1. Mix ingredients together
  2. Put in 9" round pan
  3. Sprinkle on TOPPING MIX
  4. Refrigerate overnight
  5. Bake at 350 about 20-25 min. Cut into 6-8 pieces

TOPPING MIX

 

Tropical French Toast

4 eggs
1/3 c.milk
1/4 tsp. nutmeg
2/3 c. orange juice
1/4 c. sugar
1/4 tsp. vanilla
8 - 1 inch slices Italian bread
ground Macadamia nuts
1 stick butter (do not use margarine)

1. Beat together first 6 ingredients
2. Place bread slices in pan so that they are single layer.
3. Pour egg mixture over bread and turn to make sure that all slices are wet,
4. Cover and refrigerate overnight
5. Melt butter on large cookie sheet.
6. Dip each bread slice in butter and turn over on pan.
7. Bake at 350 for 10 min.
8. Remove pan, turn slices over
9. Sprinkle with nuts
10. Return to oven for another 10-15 min.
11. Serve with syrup and Hawaiian garnish

 

Hash Brown Quiche

3 cups, shredded frozen hash browns, thawed and drained
4 T. butter, melted
3 large eggs
1 cup half and half
1 cup shredded cheddar cheese
Salt, pepper, and herbs of choice
Optional: 3/4 c. diced ham and/or 1/2 c. sliced green onion

  • DIRECTIONS
  • Dry hash browns between paper towels
  • In 9-in pie plate, toss hash browns with butter and press   into bottom and up sides of pie plate
  • Bake crust at 400 degree for 20 to 25 min. till brown and crisp
  • Meanwhile combine the remaining ingredients
  • Lower the oven temperature to 350
  • When hash brown crust is ready, pour egg mixture over it and return to over. Bake for about 30 min. until quiche is light brown and puffed. Knife inserted in center will come out clean.

Here among the faries grows thyme, French tarragon, oregano, many basil varieties, rosemary, lavender, dill, savory, chives, rue, many parsley varieties, yarrow, sweet annie, many mint varieties, borage, chervil, cilantro, curry, fennel, pineapple sage, rose, many different scented geraniums, sweet woodruff, tansy, and new ones added every year. Take a 'Walk Through Thyme,' as you walk the garden path!
